Dressing
  • 1 cup Greek Yogurt Adds creaminess and tang
  • 1 medium Avocado Provides rich texture
  • 1 bunch Cilantro Use fresh
  • 2 tablespoons Lime Juice Essential for flavor
Salad
  • 375 g Pasta Rotini or fusilli recommended
  • 1 can (19 oz) Chickpeas Drain and rinse
  • 1 can (12 oz) Corn Rinse well
  • 1 medium Cucumber Chopped
  • 1 small Red Onion Diced
  • 1/2 cup Feta Cheese Crumbled
Optional Garnish
  • 1 bunch Cilantro For garnish
  • 1 tablespoon Lime Juice Optional squeeze

Method
 

Preparation
  1. In a blender, combine Greek yogurt, avocado, cilantro, and lime juice. Blend until smooth.
  2. In a large pot, boil salted water and cook pasta according to package instructions. Drain and rinse with cold water.
  3. In a mixing bowl, combine pasta, chickpeas, corn, cucumber, and red onion.
  4. Drizzle the dressing over the salad mixture and toss gently.
  5. Fold in feta cheese ensuring it's evenly distributed.
  6. Garnish with additional cilantro and a squeeze of lime juice before serving.
