- Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
- Cook about 6 slices of bacon over medium heat until crispy, roughly 8–10 minutes. Transfer to paper towels to drain excess grease and reserve 1 tablespoon of drippings.
- In the same skillet, add one diced yellow onion and cook until translucent for 3–4 minutes. Then add 8 ounces of chopped button mushrooms and 2 minced garlic cloves, stirring until fragrant.
- Stir in a can of undiluted cream of mushroom soup, crumbled bacon, and ½ cup of milk. Mix until well combined and let bubble gently for about 2 minutes.
- Fold in 2 cans of drained cut green beans, adding salt and pepper to taste.
- Pour the mixture into the prepared baking dish and top with 1 ½ cups of French fried onions.
- Bake for about 30 minutes, or until the casserole is bubbling and the onions are golden brown.

For best crunch, add fried onions right before baking. You can prepare the casserole a day in advance without onions and bake when ready.
