Ingredients

For the Casserole
  • 6 slices Bacon Adds a delightful smokiness; for a non-pork version, turkey bacon works wonderfully.
  • 1 medium Yellow Onion Brings sweetness and depth; feel free to use sweeter varieties like Vidalia for milder flavor.
  • 8 ounces Chopped Button Mushrooms Infuses umami richness; substitute with cream of celery if avoiding mushrooms.
  • 2 cloves Garlic (minced) Enhances overall flavor; pre-minced garlic can save time.
  • 1 can Cream of Mushroom Soup Must be undiluted for right consistency; try cream of chicken as alternative.
  • 0.5 cup Milk Adds creaminess; consider half-and-half or whole milk for richer taste.
  • 1.5 cups Shredded Monterey Jack Cheese Melts beautifully; mozzarella is a great substitute.
  • 2 cans Canned Cut Green Beans The main vegetable delivers tenderness; opt for fresh or frozen if blanched.
For the Topping
  • 1.5 cups French Fried Onions Provides a crunchy top layer; crushed crackers can also add crunch.

Equipment

  • 9x13-inch baking dish
  • large skillet

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  2. Cook about 6 slices of bacon over medium heat until crispy, roughly 8–10 minutes. Transfer to paper towels to drain excess grease and reserve 1 tablespoon of drippings.
  3. In the same skillet, add one diced yellow onion and cook until translucent for 3–4 minutes. Then add 8 ounces of chopped button mushrooms and 2 minced garlic cloves, stirring until fragrant.
  4. Stir in a can of undiluted cream of mushroom soup, crumbled bacon, and ½ cup of milk. Mix until well combined and let bubble gently for about 2 minutes.
  5. Fold in 2 cans of drained cut green beans, adding salt and pepper to taste.
  6. Pour the mixture into the prepared baking dish and top with 1 ½ cups of French fried onions.
  7. Bake for about 30 minutes, or until the casserole is bubbling and the onions are golden brown.

Notes

For best crunch, add fried onions right before baking. You can prepare the casserole a day in advance without onions and bake when ready.
