- Add the chopped garlic and stir-fry until it turns golden yellow, about 1 minute.
- Stir in the Thai chilli paste and cook for 1 minute until fragrant.
- Fold in the blue swimmer crab and stir-fry for about 5 minutes, coating the crab in the mixture.
- Drizzle in the fish sauce and sprinkle in the sugar, tossing to coat and simmer for 1 minute.
- Add the chopped spring onions and stir just until they wilt slightly, about 30 seconds.
- Plate the crab and garnish with sliced chili before serving.
