  • 1 tablespoon Fish Sauce Substitute with gluten-free soy sauce if needed
  • 1 teaspoon Sugar Adjust to taste
For the Crab Stir-Fry
  • 500 grams Blue Swimmer Crab Fresh crab is best
  • 2 tablespoons Chopped Garlic Enhances aroma and flavor
  • 2 stalks Chopped Spring Onions Use scallions as a substitute
  • 2 tablespoons Vegetable Oil Canola or peanut oil recommended
For Garnish
  • 1 piece Chili for Garnish Optional spice

Method
 

Cooking Steps
  1. Heat the oil in a large, high-sided pan over medium-high heat until shimmering, about 1 minute.
  2. Add the chopped garlic and stir-fry until it turns golden yellow, about 1 minute.
  3. Stir in the Thai chilli paste and cook for 1 minute until fragrant.
  4. Fold in the blue swimmer crab and stir-fry for about 5 minutes, coating the crab in the mixture.
  5. Drizzle in the fish sauce and sprinkle in the sugar, tossing to coat and simmer for 1 minute.
  6. Add the chopped spring onions and stir just until they wilt slightly, about 30 seconds.
  7. Plate the crab and garnish with sliced chili before serving.
