Step-by-Step Instructions
  1. Heat vegetable oil in a large pan over medium heat until shimmering (about 2 minutes).
  2. Add chopped garlic and stir-fry for 1 minute until golden yellow.
  3. Stir in Thai chilli paste and cook for another minute.
  4. Add the blue swimmer crab and stir-fry for approximately 5 minutes.
  5. Pour in fish sauce and sprinkle sugar, mixing for 1 minute.
  6. Add chopped spring onions, stir to combine, and remove from heat.
  7. Transfer to a serving plate and garnish with slices of fresh chili.
