  • 2 cups Corn Kernels fresh, canned, or thawed frozen, drain well
  • 8 oz Cream Cheese softened
  • 1 cup Sour Cream can use Greek yogurt for a lighter version
  • 1/2 cup Mayonnaise for authentic richness
  • 2 cups Shredded Mozzarella or Monterey Jack Cheese add more on top for extra gooeyness
  • 1/2 cup Grated Parmesan Cheese
  • 1 tbsp Chili Powder
  • 1 tbsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Salt adjust to taste
  • 1 tsp Black Pepper adjust to taste
  • 1/4 cup Chopped Fresh Cilantro for garnish
  • 1 each Juice of 1 Lime
  • 1/2 cup Sliced Jalapeños optional
  • to taste Hot Sauce optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F) and lightly grease a 23 x 33 cm baking dish.
  2. In a large mixing bowl, combine cooked shredded chicken, corn kernels, softened cream cheese, sour cream, and mayonnaise.
  3. Fold in shredded mozzarella or Monterey Jack cheese, grated Parmesan, chili powder, paprika, garlic powder, lime juice, salt, and pepper until smooth.
  4. Spread the chicken mixture into the prepared dish and sprinkle additional cheese on top.
  5. Bake for about 20-25 minutes or until golden and bubbly. Remove from oven and cool for 5 minutes.
  6. Garnish with chopped cilantro and additional jalapeños or hot sauce if desired before serving.
