  • 2 tbsp Lime Juice Lemon juice can substitute in a pinch.
  • 1/4 cup Fresh Cilantro Parsley can be used as an alternative.
For the Base
  • 2 cups Cooked Rice Brown rice or quinoa are healthier options.

Method
 

Instructions
  1. Preheat your grill or grill pan to medium-high heat, about 375°F to 400°F.
  2. Coat the chicken breasts with olive oil and season with chili powder, smoked paprika, garlic powder, salt, and black pepper.
  3. Grill the chicken for about 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F.
  4. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into bite-sized pieces.
  5. Grill or sauté the corn kernels for about 5 minutes until charred.
  6. Combine mayonnaise, sour cream, and lime juice in a bowl and whisk until smooth to make lime crema.
  7. Assemble the bowls with cooked rice, grilled chicken, charred corn, cotija cheese, lime crema, and fresh cilantro.
