Step-by-Step Instructions
  1. Preheat your Blackstone grill to medium-high heat, aiming for about 400°F. Pour a thin layer of vegetable oil over the cooking surface.
  2. Spread diced skirt steak and sliced onions across one side. Season with onion powder, salt, and black pepper. Sauté for about 4 to 8 minutes until browned.
  3. Push the cooked steak and onions to one side and reduce the heat to medium. Warm the flour tortillas on the clear side of the grill.
  4. Layer mozzarella and Monterey Jack cheeses, followed by the sautéed steak and onions on each tortilla. Top with more cheese.
  5. Fold each tortilla in half and cook for about 1 to 2 minutes on each side until golden brown and crispy.
