Step-by-Step Instructions
  1. In a large non-stick skillet, combine minced garlic, eggs, skim milk, salt, and pepper. Set over medium-low heat and cook for about 4 minutes, stirring gently until eggs form soft curds.
  2. Add baby spinach to the skillet and stir for another 1-2 minutes until wilted and vibrant.
  3. Toast the whole grain bread slices until golden brown using a toaster or skillet.
