Step-by-Step Instructions
  1. Rinse jasmine rice under cold water until clear, then combine with coconut milk, water, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
  2. In a bowl, whisk together maple syrup, sriracha, soy sauce, apple cider vinegar, garlic, and ginger. Season chicken with salt and pepper, coat in marinade, and let marinate for 10-15 minutes.
  3. Heat olive oil in a skillet, add marinated chicken and cook for 4-5 minutes per side until golden brown and cooked through. Pour in remaining marinade and simmer for 2 minutes.
  4. Serve by placing coconut rice in bowls, topping with chicken, and garnishing with cilantro, lime juice, coconut flakes, and green onions.
