Ingredients

  • 2 tbsp Olive oil Preferred for its taste.
  • 1 tsp Ground cumin Adjust quantity for a milder or spicier flavor.
  • 1 tsp Paprika Spice according to your taste.
  • 1 tsp Salt Use to your preference.
For the Burrito Bowl
  • 1 cup Brown rice White rice can be substituted.
  • 1 medium Red onion Can substitute with green onions.
  • 2 pcs Limes Use fresh for best flavor.
  • 1 tsp Caster sugar Balances out lime juice acidity.
  • 500 g Spiced beef mince Leftover spiced beef works well.
  • 1 can Black beans Optional for extra protein.
  • 1 pcs Avocado Ensure it's ripe for best texture.
  • 2 pcs Tomatoes Choose ripe and juicy for added flavor.
  • 1 cup Greek-style yoghurt Provides creaminess.
  • 2 tbsp Coriander Can use cilantro if preferred.

Method
 

Tortilla Chip Preparation
  1. Preheat your oven to 180°C (160°C fan) or Gas Mark 4. Cut the tortilla wraps into triangles and toss them in a bowl with olive oil, cumin, paprika, and a pinch of salt until evenly coated. Spread the tortilla pieces on a baking tray in a single layer and bake for 8–12 minutes, watching for them to turn golden crisp.
Cooking the Rice
  1. Cook the brown rice according to package instructions, which typically takes around 20–25 minutes. Bring water to a boil, add rice, cover and simmer until tender.
Pickling the Onion
  1. Thinly slice the red onion and combine it with fresh lime juice, caster sugar, and a pinch of salt. Stir well and let sit for at least 10 minutes.
Heating the Beef
  1. In a medium saucepan, warm your spiced beef mince over medium heat for about 4–5 minutes, stirring occasionally. If dry, add a splash of water or stock.
Assembling the Bowl
  1. Divide the warm brown rice among serving bowls and top each with spiced beef, optional black beans, pickled onions, avocado slices, and diced tomatoes.
Topping the Dish
  1. Add dollops of Greek-style yogurt and sprinkle with fresh coriander. Serve with crispy tortilla chips or on the side for added crunch.
