Roasting and Baking
- Preheat your oven to 400°F (200°C). Toss the sweet potatoes with olive oil, cinnamon, and nutmeg. Roast for 50-60 minutes until tender.
- Lower the oven temperature to 375°F (190°C). Grease a 9x13-inch baking dish. Combine roasted sweet potatoes, almond milk, vanilla, brown sugar, maple syrup, raisins, and mini marshmallows in a bowl. Transfer mixture to baking dish and add pieces of butter on top.
- Mix the raw pecans with maple syrup. Sprinkle this mixture over the casserole. Cover with aluminum foil.
- Bake covered for 15 minutes, then remove foil and bake another 15 minutes until golden and bubbling. Let cool slightly before serving.
