  • 4 cups sweet potatoes peeled and cubed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup almond milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter or vegan butter
  • 0.5 cup organic brown sugar
  • 0.25 cup pure maple syrup
  • 0.5 cup raisins optional, soak for enhanced flavor
  • 1 cup mini marshmallows vegan options available
For the Topping
  • 1 cup raw pecans
  • 2 tablespoons maple syrup for coating pecans

Method
 

Roasting and Baking
  1. Preheat your oven to 400°F (200°C). Toss the sweet potatoes with olive oil, cinnamon, and nutmeg. Roast for 50-60 minutes until tender.
  2. Lower the oven temperature to 375°F (190°C). Grease a 9x13-inch baking dish. Combine roasted sweet potatoes, almond milk, vanilla, brown sugar, maple syrup, raisins, and mini marshmallows in a bowl. Transfer mixture to baking dish and add pieces of butter on top.
  3. Mix the raw pecans with maple syrup. Sprinkle this mixture over the casserole. Cover with aluminum foil.
  4. Bake covered for 15 minutes, then remove foil and bake another 15 minutes until golden and bubbling. Let cool slightly before serving.
