Method
 

Roasting and Baking
  1. Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, cinnamon, and nutmeg. Roast for 50-60 minutes until tender.
  2. Reduce oven temperature to 375°F (190°C). In a bowl, combine roasted sweet potatoes, almond milk, vanilla extract, brown sugar, maple syrup, nutmeg, allspice, soaked raisins, and half of the marshmallows. Transfer to greased baking dish, top with butter.
  3. Mix pecans with maple syrup in a bowl. Sprinkle over sweet potato mixture, creating a crunchy layer.
  4. Cover with foil and bake at 375°F (190°C) for 15 minutes. Remove foil and bake for an additional 15 minutes until topping is golden brown.
