Roasting and Baking
- Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, cinnamon, and nutmeg. Roast for 50-60 minutes until tender.
- Reduce oven temperature to 375°F (190°C). In a bowl, combine roasted sweet potatoes, almond milk, vanilla extract, brown sugar, maple syrup, nutmeg, allspice, soaked raisins, and half of the marshmallows. Transfer to greased baking dish, top with butter.
- Mix pecans with maple syrup in a bowl. Sprinkle over sweet potato mixture, creating a crunchy layer.
- Cover with foil and bake at 375°F (190°C) for 15 minutes. Remove foil and bake for an additional 15 minutes until topping is golden brown.
