Step-by-Step Instructions
  1. Pat the chicken thighs dry. Mix salt, coriander, cinnamon, nutmeg, and thyme. Rub evenly over chicken.
  2. In a skillet, melt butter over medium heat. Sear chicken for 5 minutes on each side until golden brown, then set aside.
  3. In the same skillet, add butter, then brown sugar. Stir to dissolve, then add apples and shallots. Sauté for 5 minutes.
  4. Pour in apple cider, stir, and simmer for 5 minutes to thicken the glaze.
  5. Return chicken to the skillet, coat with the glaze, and allow to simmer for 2 minutes.
  6. Plate the chicken and spoon apple mixture over. Garnish with fresh herbs.
