- Prepare the Mozzarella: Cut small indents into the tops of the mozzarella balls using a paring knife.
- Create the Eyeballs: Fill the indents of the mozzarella balls with chopped Kalamata olives.
- Slice the Pepperoni: Cut the pepperoni stick into small pieces about 3/4 inch long.
- Cut the Red Pepper: Slice the red bell pepper into small wedges.
- Assemble the Skewers: Thread pieces of red pepper, pepperoni, a mozzarella ball filled with olive, more pepperoni, and another mozzarella ball onto a skewer.
- Chill and Serve: Refrigerate the assembled skewers for at least 30 minutes before serving.
