  • 1 cup tomatoes Fresh, diced.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine olive oil, minced garlic, oregano, lemon juice, salt, and pepper. Whisk until smooth.
  3. Add chicken thighs and chickpeas into the marinade and coat evenly. Let soak for 10-15 minutes.
  4. Spread the marinated chicken and chickpeas on a large sheet pan in a single layer.
  5. Roast in the oven for 25-30 minutes until chicken is golden and cooked through.
  6. Add diced tomatoes to the pan and roast for an additional 5 minutes.
  7. Remove from oven and sprinkle crumbled feta cheese over the top.
  8. Let cool briefly before serving with warm pita and greens.
