Ingredients
  

Peanut Sauce
  • 0.5 cup peanut butter or sunflower seed butter for peanut-free option
  • 0.25 cup low-sodium soy sauce
  • 2 tablespoons brown sugar or honey honey adds floral sweetness
  • 1 tablespoon rice wine vinegar or apple cider vinegar
  • 2 cloves minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon sriracha sauce adjust to heat preference
Wrap Filling
  • 2 cups shredded cooked chicken rotisserie chicken saves time
  • 2 cups coleslaw mix or your favorite crunchy veggies
  • 1 whole grated carrot optional
  • 0.25 cup chopped cilantro omit if not a fan
  • 0.5 cup roasted, salted peanuts or seeds for nut-free option
  • tortillas gluten-free tortillas if necessary

Method
 

Making the Wraps
  1. In a medium bowl, whisk together peanut butter, soy sauce, brown sugar or honey, rice wine vinegar, minced garlic, minced ginger, and sriracha sauce. Thin with warm water if too thick.
  2. In a large mixing bowl, combine shredded chicken, coleslaw mix, grated carrot, chopped cilantro, and peanuts. Drizzle half of the peanut sauce over the mixture and toss to coat.
  3. Warm tortillas in a microwave for about 30 seconds, covered with a damp paper towel.
  4. Lay a warm tortilla flat and spoon filling mixture along the center. Wrap tightly, tucking in sides.
  5. Serve immediately, drizzled with extra peanut sauce if desired.
