For the Topping
  • 8 slices Brie Cheese Camembert cheese is a good substitute.
  • 1 cup Dried Cranberries Dried cherries can be used for a different flavor.
  • 1 cup Toasted Pecans Walnuts or pistachios make fine alternatives.
  • 2 sprigs Fresh Rosemary or Thyme Optional garnish; can use parsley instead.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into ¼-inch thick rounds.
  3. Drizzle the sweet potato rounds with olive oil, and season generously with salt and pepper. Toss gently to coat, then roast for 20–25 minutes.
  4. Once roasted, remove from the oven and top each round with a slice of brie cheese. Return to the oven for an additional 5 minutes.
  5. Sprinkle generously with dried cranberries and toasted pecans.
  6. Serve warm and enjoy!
