  • 8 oz Cream Cheese softened
  • 1 cup Sour Cream or Greek yogurt
  • 1/2 cup Mayonnaise
  • 2 cups Shredded Mozzarella or Monterey Jack Cheese plus extra for topping
  • 1/2 cup Grated Parmesan Cheese
  • 1 tbsp Chili Powder adjust for heat preference
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1/4 cup Chopped Fresh Cilantro for garnish
  • 1 each Juice of Lime
  • 1/2 cup Sliced Jalapeños optional
  • to taste tbsp Hot Sauce optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F) and grease a 23 x 33 cm baking dish.
  2. In a large mixing bowl, combine the cooked shredded chicken, corn kernels, softened cream cheese, sour cream, mayonnaise, shredded cheese, and parmesan. Add chili powder, paprika, garlic powder, salt, and black pepper.
  3. Pour the mixture into the prepared baking dish and spread evenly. Top with additional shredded cheese.
  4. Bake for 20-25 minutes until the top is golden and bubbling.
  5. Let cool for a few minutes and garnish with cilantro. Add jalapeños or hot sauce if desired.
