Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and arrange five oven-safe containers on a baking sheet.
  2. Dice the sweet potatoes into bite-sized pieces and distribute them evenly among the bowls, spray with avocado oil, and sprinkle with salt and pepper.
  3. Bake the sweet potatoes for 35-40 minutes until tender and golden brown.
  4. In the meantime, heat a skillet over medium-high heat, add the breakfast turkey sausage, and cook for 8-10 minutes until browned.
  5. Dice the red and green bell peppers into small pieces and set aside.
  6. Distribute the cooked turkey sausage and diced bell peppers among each bowl, layering them atop the sweet potatoes.
  7. Crack one egg into each bowl and pour in ½ cup of egg whites, sprinkle with salt and pepper, and gently mix.
  8. Return the bowls to the oven and bake for another 35-40 minutes or until the eggs are set.
  9. Allow the bowls to cool completely before covering. Store in the refrigerator.
  10. Reheat in the microwave for 2-3 minutes before serving.
