Method
 

Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients.
  3. In a separate bowl, combine the wet ingredients and whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently. Fold in the diced jalapeños.
  5. Scoop generous spoonfuls of batter onto the baking tray, spaced about 4 cm apart, and bake for 12-15 minutes.
  6. Let the cornbread rounds cool on the tray for 3-5 minutes, then transfer them to a wire rack to cool completely.
  7. Prepare the filling by mixing goat cheese, cream cheese, and milk, then fold in crispy bacon and chives.
  8. Spread filling on half of the cooled cornbread rounds and top with another round to create a sandwich.
