- Thaw the Puff Pastry by placing it in the refrigerator overnight.
- Preheat your oven to 400°F (200°C) or as per puff pastry instructions.
- In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 cups of fresh spinach and 1 cup of diced ham; sauté for 3-5 minutes.
- Roll out the thawed puff pastry on a floured surface to about 1/8 inch thick and cut into 4x4 inch squares.
- Add a spoonful of the ham and spinach mixture on each pastry square and sprinkle with cheese.
- Fold the pastry over the filling diagonally and seal the edges.
- Bake in the preheated oven for 15-20 minutes until golden brown.
- Allow to cool slightly before serving.
