  • 2 pounds Boneless, Skinless Chicken Breasts
  • 4 cloves Garlic minced
  • 1/4 cup Extra-Virgin Olive Oil
  • 1/4 cup Fresh Lemon Juice freshly squeezed
  • 2 tablespoons Red Wine Vinegar
  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika
For Grilling
  • 10 pieces Wooden Skewers soaked in water
  • 1 whole Lemon cut into wedges

Method
 

Preparation
  1. In a mixing bowl, combine freshly minced garlic, extra-virgin olive oil, fresh lemon juice, red wine vinegar, dried oregano, salt, black pepper, and paprika. Whisk together for about 2 minutes until the mixture is smooth and well-blended.
  2. Cut boneless, skinless chicken breasts into evenly sized cubes and add them to the marinade. Toss thoroughly until every piece is coated completely. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for deeper flavor penetration.
  3. While the chicken marinates, preheat your grill to medium-high heat, around 375°F to 400°F.
  4. After marination, take soaked wooden skewers and thread the marinated chicken pieces onto each skewer, leaving a little space between them for even cooking.
  5. Place the skewers on the preheated grill and cook for about 10–15 minutes, turning occasionally. Ensure the internal temperature reaches 165°F.
  6. Once grilled to perfection, remove the skewers from the grill and let them rest for about 5 minutes. Serve with fresh lemon wedges, tzatziki sauce, warm pita bread, and a crisp Greek salad.

Notes
