  • 2 tablespoons Lemon Juice Fresh is recommended
  • 1 teaspoon Garlic Powder Can substitute with fresh minced garlic
  • 1 teaspoon Dried Dill Fresh dill can also be used
Optional Enhancements
  • 2 tablespoons Fresh Herbs (Dill or Parsley) For garnish
  • 1/2 cup Feta Cheese Optional, can omit for dairy-free version

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13 inch baking dish with a light coating of olive oil or cooking spray.
  3. In the greased baking dish, combine the uncooked jasmine or brown rice, chicken broth, and chicken pieces. Pour the tzatziki sauce evenly over the top.
  4. If desired, sprinkle fresh herbs such as dill or parsley over the top along with feta cheese.
  5. Cover the baking dish tightly with aluminum foil and bake for 25 to 30 minutes.
  6. Remove the foil and allow the mixture to bake for an additional 10 to 15 minutes, monitoring closely.
  7. Once finished, let the dish rest for about 5 minutes.
  8. Scoop portions onto plates and garnish with additional herbs if desired.
