Step-by-Step Instructions for Chickpea Meatballs
  1. Preheat your oven to 350°F (180°C). Drain and rinse your can of chickpeas.
  2. In a food processor, combine the drained chickpeas, red onion, garlic, nutritional yeast, soy sauce, and tomato paste. Pulse until smooth and slightly chunky.
  3. Add smoked paprika, coriander powder, and cumin to the mixture. Pulse again until spices are evenly distributed.
  4. Transfer to a mixing bowl and stir in breadcrumbs and parsley. Mix until a cohesive dough forms.
  5. Take a tablespoon-sized portion and roll it into a ball. Place each meatball on a parchment-lined baking tray.
  6. Freeze the tray of meatballs for about 15 minutes to firm up.
  7. Brush the meatballs with olive oil and bake for 20 minutes, flipping halfway through.
