  • 1 pound Ground Chicken or ground turkey
  • 2 teaspoons Garam Masala or curry powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Caramelized Carrots
  • 2 cups Carrots sliced, or parsnips
  • 2 tablespoons Olive Oil
For the Yogurt Sauce
  • 1 cup Yogurt or Greek yogurt
  • 2 tablespoons Fresh Herbs cilantro or parsley
  • 1 tablespoon Lemon Juice
To Garnish
  • 1 cup Greens optional, baby spinach or mixed herbs

Method
 

Cooking Steps
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine ground chicken with garam masala, salt, and pepper.
  3. Form rustic meatballs about the size of a golf ball and place them on a parchment-lined sheet pan.
  4. Slice carrots and scatter them around the meatballs, drizzling with olive oil.
  5. Roast in the oven for 25-30 minutes until meatballs are golden-brown and cooked through.
  6. In another bowl, mix yogurt with herbs, lemon juice, salt, and pepper to prepare the sauce.
  7. Serve the meatballs and carrots drizzled with yogurt sauce, topped with optional greens.
