Ingredients
  

For the Tofu
  • 1 block Extra-firm tofu Substitute tempeh for a nutty flavor.
  • 1 teaspoon Kosher salt Substitute sea salt for lower sodium.
  • 1 teaspoon Paprika Use smoked paprika for deeper flavor.
  • 1 teaspoon Garlic powder Use fresh minced garlic for a stronger taste.
  • 1 teaspoon Chili powder Cumin or cayenne are great alternatives.
  • 1 teaspoon Freshly ground black pepper Substitute white pepper for milder flavor.
  • 1 teaspoon Ground cumin Use coriander for a citrusy twist.
For the Vegetables
  • 2 medium Sweet potatoes Regular potatoes or butternut squash can also be used.
  • 2 cups Broccoli Cauliflower or Brussels sprouts are great substitutes.
For Roasting
  • 2 tablespoons Neutral oil Vegetable or canola oil preferred.
For the Sauce
  • 1 cup BBQ sauce Homemade sauce can be customized to taste.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Boil water in a pot and add kosher salt. Submerge the tofu in boiling water for 10 minutes.
  3. Drain and cool the tofu, then cube it. Toss with salt, paprika, garlic powder, chili powder, black pepper, cumin, and oil.
  4. Slice sweet potatoes into ⅓-inch thick half-moons and cut broccoli into florets. Toss with oil and salt.
  5. Spread the seasoned tofu, sweet potatoes, and broccoli evenly on the sheet pan.
  6. Roast in the oven for 30 to 35 minutes, flipping halfway through for even cooking.
  7. In the last 10 minutes of roasting, drizzle BBQ sauce over the tofu.
  8. Serve warm or chilled as desired.
