  • 1 pound boneless chicken thighs can use boneless breasts
  • 2 tablespoons olive oil can substitute with avocado oil
  • 3 cloves garlic minced
  • 1 large onion finely chopped
  • 2 cups bell peppers diced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chicken broth can use white wine instead
  • 1 cup feta cheese crumbled
  • 1/4 cup parsley freshly chopped for garnish

Method
 

Cooking Steps
  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic; sauté for 3–4 minutes until translucent.
  3. Stir in bell peppers and cook for an additional 5 minutes.
  4. Pour in diced tomatoes and chicken broth; simmer for about 3 minutes.
  5. Add chicken pieces, season, and cook for another 2–3 minutes.
  6. Transfer mixture to a greased baking dish and top with feta cheese.
  7. Bake for 35 minutes until chicken is cooked and casserole is bubbling.
  8. Garnish with parsley and serve with bread or pita.
