Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium heat until shimmering, about 2 minutes.
  2. Add sliced beef sirloin to the pot and sauté for 5-7 minutes until browned. Transfer to a plate.
  3. In the same pot, add diced onion, chopped green bell pepper, and minced garlic. Sauté for 4-5 minutes until the onion is translucent.
  4. Return the browned beef to the pot, then pour in beef broth. Stir and simmer on medium-low heat for 15 minutes.
  5. Gradually stir in heavy cream and shredded provolone cheese, heating until melted and creamy, about 3-5 minutes.
  6. Adjust seasoning with salt and pepper, garnish with fresh herbs, and serve hot with crusty bread.
