  1. Begin by heating a skillet or grill pan over medium heat, adding a drizzle of olive oil. Allow the oil to warm for about 2 minutes until shimmering.
  2. While your skillet heats, warm the low-carb tortillas in the microwave for about 10-15 seconds to prevent cracks.
  3. In a large mixing bowl, combine the cooked chicken breast, shredded mozzarella, cheddar cheese, and softened cream cheese. Add the minced garlic, chopped parsley, salt, and pepper.
  4. Take a warmed tortilla and place about 1/2 cup of the chicken mixture in the center. Carefully roll the tortilla tightly, tucking in the sides as you go.
  5. Transfer the filled wraps seam-side down into the preheated skillet. Cook for about 2-3 minutes on each side until golden brown and the cheese begins to ooze out.
