Preparation Steps
  1. Preheat your Blackstone griddle or a large skillet over medium-high heat for about 3-5 minutes, then add oil.
  2. Add sliced Yukon Gold potatoes, season with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10-12 minutes until golden brown.
  3. Push the potatoes to one side and brown the sliced smoked sausage in the cleared space for about 5 minutes.
  4. Stir in chopped onion, red bell peppers, and zucchini, cook for another 5-7 minutes until vegetables are tender yet crunchy.
  5. Taste and adjust seasoning, then transfer to a serving plate and garnish with fresh parsley.
