Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your workspace.
  2. In a large skillet over medium heat, pour half of the olive oil and warm it. Add minced garlic and sliced yellow onion, sauté for about 5 minutes until translucent.
  3. Season chicken thighs with salt, pepper, ginger, paprika, cumin, and turmeric. Sear in the skillet, skin-side down, for 4-5 minutes on each side until golden brown.
  4. Layer sliced preserved lemons and green olives on top of the chicken. Pour enough water into the skillet to cover the base, then cover with a lid.
  5. Transfer the skillet to your preheated oven and bake for about 1 hour until the chicken reaches an internal temperature of 165°F (74°C).
  6. For crispy skin, turn on the broiler for the last 5 minutes and watch closely.
