- Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your workspace.
- In a large skillet over medium heat, pour half of the olive oil and warm it. Add minced garlic and sliced yellow onion, sauté for about 5 minutes until translucent.
- Season chicken thighs with salt, pepper, ginger, paprika, cumin, and turmeric. Sear in the skillet, skin-side down, for 4-5 minutes on each side until golden brown.
- Layer sliced preserved lemons and green olives on top of the chicken. Pour enough water into the skillet to cover the base, then cover with a lid.
- Transfer the skillet to your preheated oven and bake for about 1 hour until the chicken reaches an internal temperature of 165°F (74°C).
- For crispy skin, turn on the broiler for the last 5 minutes and watch closely.
