  • 4 Large eggs No substitute without altering consistency.

  • 1 lb Mild Italian sausage Can substitute with another sausage variety.
  • 2 tablespoons Olive oil Use butter for a richer flavor.
  • 1 cup Onion (diced) Can substitute with shallots.
  • 4 tablespoons Fresh sage (chopped) Dried sage can work in a pinch.
  • 1 teaspoon Ground sage Optional if using fresh sage.
For the Sweet Touch
  • 2 cups Apples (peeled and diced) Honey crisp preferred.
For Seasoning
  • 1 teaspoon Kosher salt Regular salt can be used, adjust amounts.
  • 1/2 teaspoon Ground nutmeg Can replace with allspice.
  • 1/2 teaspoon Pepper Adjust based on spice preference.
For the Cheesy Goodness
  • 1 cup Shredded Gruyère cheese Can substitute with sharp cheddar.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and spray a 13×9 inch baking dish with non-stick cooking spray.
  2. Cut the French bread into 1-inch cubes and dry in the oven for 5-7 minutes if fresh.
  3. Remove the sausage from its casings and brown in a skillet over medium heat for about 5-7 minutes.
  4. Sauté diced onion in olive oil for 2-3 minutes, then add apples and cook until tender.
  5. In a mixing bowl, whisk eggs with milk, heavy cream, salt, nutmeg, sage, and pepper.
  6. Layer half of the dried bread cubes in the baking dish, followed by half of the sausage and vegetable mixture, and repeat.
  7. Pour the custard mixture over the layers and gently mix in shredded cheese. Allow to rest for 5 minutes.
  8. Bake for 50-60 minutes until the top is golden brown and a knife comes out clean.
