Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients for assembly.
  2. Butterfly each chicken breast by slicing horizontally and pound to an even thickness of 1/2 inch.
  3. Combine feta, spinach, sun-dried tomatoes, garlic, and red pepper flakes in a bowl for the filling.
  4. Season both sides of the chicken with salt, pepper, garlic powder, oregano, and paprika.
  5. Place a portion of filling at one end of each breast and roll tightly, securing with toothpicks.
  6. Heat olive oil in an oven-safe skillet and sear rolls seam-side down for 3-4 minutes until golden.
  7. Transfer the skillet to the oven and bake for 25 minutes, checking for an internal temperature of 165°F (75°C).
  8. Let the chicken rest for 5 minutes before slicing and serving.
