Step-by-Step Instructions
  1. Rinse 2–3 Persian cucumbers under cold water and slice one end at an angle, creating oval slices.
  2. Place cucumber slices into a mixing bowl and sprinkle with ½ teaspoon of salt. Toss gently and allow to sit for at least 20 minutes.
  3. After 20 minutes, drain excess water and rinse cucumbers briefly under cold water.
  4. In a small bowl, combine sesame oil, light soy sauce, sugar, rice vinegar, and chili oil. Whisk until dissolved.
  5. Pour the dressing over cucumber slices and add sesame seeds. Toss gently to coat every slice.
  6. Transfer to a serving dish and serve immediately for the best crunch.
