- Rinse 2–3 Persian cucumbers under cold water and slice one end at an angle, creating oval slices.
- Place cucumber slices into a mixing bowl and sprinkle with ½ teaspoon of salt. Toss gently and allow to sit for at least 20 minutes.
- After 20 minutes, drain excess water and rinse cucumbers briefly under cold water.
- In a small bowl, combine sesame oil, light soy sauce, sugar, rice vinegar, and chili oil. Whisk until dissolved.
- Pour the dressing over cucumber slices and add sesame seeds. Toss gently to coat every slice.
- Transfer to a serving dish and serve immediately for the best crunch.
