Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Coat chicken breasts with mayonnaise, then dredge in crushed kettle-cooked potato chips, and place on the baking sheet.
  3. Bake chicken for 15-17 minutes until cooked through and golden brown.
  4. Preheat your waffle iron.
  5. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  6. In another bowl, melt the butter and mix with buttermilk. Combine with dry ingredients and fold in beaten egg whites.
  7. Pour batter into preheated waffle iron and cook for about 5 minutes until golden brown.
  8. In a saucepan, melt butter, whisk in flour until golden, then slowly add milk while whisking until thickened, about 5 minutes.
  9. To serve, place a waffle on a plate, top with chicken and drizzle with gravy. Garnish with scallions.
