Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C). Gather your ingredients and prepare your cast-iron skillet.
  2. Mix together thyme, smoked paprika, garlic powder, and onion powder to create a dry rub.
  3. Coat chicken pieces with the dry rub. Let sit for about 10 minutes.
  4. In a cast-iron skillet, cook the bacon until crispy, about 5-7 minutes. Remove and set aside.
  5. Sauté sliced onions in the bacon fat until golden. Add potatoes and cabbage; cook until slightly tender.
  6. Nestle the seasoned chicken pieces into the vegetable mixture. Top with crispy bacon.
  7. Transfer the skillet to the oven and roast the chicken for about 30-40 minutes.
