Cook until the beef is browned and fully cooked, about 5-7 minutes, ensuring to drain any excess fat.
  2. Once the beef is cooked, add 2 tablespoons of tomato paste, 1 can of diced tomatoes with green chilies, 2 cups of beef broth, and 1 cup of whole milk to the pot. Stir well to combine and bring to a gentle boil.
  3. Add 8 ounces of uncooked shell pasta to the boiling sauce, then reduce the heat to medium-low. Cover the pot and let it simmer for about 10-12 minutes, stirring occasionally.
  4. Lower the heat further and add 1 cup of shredded Monterey Jack cheese and 1 cup of shredded mild cheddar cheese to the pasta. Stir gently until the cheese melts completely and the mixture becomes creamy.
