- In an oven-safe roasting pan or a casserole dish, combine coconut milk, green curry paste, minced ginger, minced garlic, fish sauce, and crispy chilli oil.
- Toss in the chopped bok choy, zucchini, and frozen dumplings, stirring to coat them in the sauce.
- Place the dish in the preheated oven and bake for approximately 20 minutes.
- Remove the dish from the oven, drizzle with crispy chilli oil, sprinkle with coriander leaves, and serve hot with lime wedges.
