Ingredients
  

For the Dough
  • 1 cup Whole Milk Warmed to 105°F-115°F
  • 2 tablespoons Granulated Sugar Divided
  • 2 teaspoons Active Dry Yeast Bloom in warm milk
  • 2 Large Eggs At room temperature
  • 4 cups All-Purpose Flour Adjust if sticky
  • 1 teaspoon Kosher Salt
  • 1/4 cup Unsalted Butter Softened
For the Filling
  • 1/2 cup Pesto Homemade recommended
  • 1/4 cup Parmesan Cheese Grated
  • 1/2 cup Feta Cheese Crumble or substitute
  • 1 cup Fresh Spinach Chopped
  • 1/2 cup Oil-Packed Sun-Dried Tomatoes Chopped
  • 1 cup Mozzarella Cheese Shredded
For Finishing Touches
  • 1/4 cup Melted Butter For brushing
  • 2 cloves Minced Garlic
  • 1/4 cup Grated Parmesan Cheese For topping

Method
 

Dough Preparation
  1. Warm the whole milk to 105°F-115°F. Combine with 1 tablespoon of sugar and sprinkle active dry yeast on top. Let sit for 5 minutes until foamy.
  2. In a separate bowl, whisk eggs until smooth.
  3. In a stand mixer, combine remaining sugar, all-purpose flour, and kosher salt. Add foamy yeast mixture and softened butter. Knead at medium speed for 5 minutes until smooth.
  4. Transfer dough to a buttered bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.
Filling and Baking
  1. Punch down the risen dough, roll it out to 1/2 inch thick, and spread pesto over it. Sprinkle with filling ingredients evenly.
  2. Roll dough tightly, seal, and cut into equal pieces. Arrange in a buttered baking dish and cover to rise for 40 minutes.
  3. Preheat oven to 350°F. Bake rolls for 30-35 minutes until golden brown.
  4. While baking, melt butter and add minced garlic. Brush garlic butter over warm rolls and sprinkle with Parmesan before serving.
