- In a large mixing bowl, combine the mashed bananas, grated carrots, and crushed pineapple, then add coconut flakes, raisins, walnuts, vegetable oil, sugar, eggs, and vanilla. Mix well.
- In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, and salt. Gradually fold this into the wet ingredients until just combined.
- Pour the batter into the prepared loaf pan. Optionally, place a halved banana on top.
- Bake for about 60 minutes, checking for doneness with a toothpick.
