Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish with cooking spray.
  2. Soak the chopped pitted dates in boiling water for about 15 minutes.
  3. Whisk together all-purpose flour, baking powder, baking soda, and fine sea salt.
  4. Cream together softened butter, demerara sugar, and dark brown sugar using an electric mixer for about 3 minutes.
  5. Add eggs one at a time to the creamed mixture, mixing well after each addition.
  6. Fold the dry ingredients into the wet mixture until just combined.
  7. Blend the soaked dates with the water until smooth and fold into the batter.
  8. Pour the batter into the prepared baking dish and bake for 25-30 minutes.
  9. Prepare the toffee sauce by melting butter, whisking in heavy cream, brown sugar, and a pinch of salt over medium heat.
  10. After baking, poke holes in the pudding and pour half the warm toffee sauce over it.
