- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish with cooking spray.
- Soak the chopped pitted dates in boiling water for about 15 minutes.
- Whisk together all-purpose flour, baking powder, baking soda, and fine sea salt.
- Cream together softened butter, demerara sugar, and dark brown sugar using an electric mixer for about 3 minutes.
- Add eggs one at a time to the creamed mixture, mixing well after each addition.
- Fold the dry ingredients into the wet mixture until just combined.
- Blend the soaked dates with the water until smooth and fold into the batter.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes.
- Prepare the toffee sauce by melting butter, whisking in heavy cream, brown sugar, and a pinch of salt over medium heat.
- After baking, poke holes in the pudding and pour half the warm toffee sauce over it.
- Broil for 1-2 minutes to caramelize the sauce slightly.
- Serve warm with additional toffee sauce and optional whipped cream.
