Step-by-Step Instructions
  1. Start by removing the prime rib roast from the fridge and letting it rest uncovered at room temperature for 1 to 2 hours.
  2. Preheat your oven to 450°F (230°C). In a small bowl, mix together olive oil or softened butter with kosher salt, freshly cracked black pepper, garlic powder, and onion powder. Generously rub this mixture all over the prime rib roast.
  3. Arrange sliced onions in a large roasting pan to create a flavorful bed. Place a roasting rack inside and set the seasoned prime rib fat-side up on the rack. Roast at 450°F for 20 minutes.
  4. Reduce the oven temperature to 325°F (165°C) to continue cooking the roast. Monitor the internal temperature aiming for 120°F for rare, 130°F for medium-rare, or 135°F for medium.
  5. Once the prime rib reaches the desired doneness, remove it from the oven and tent it loosely with foil. Allow it to rest for 25-30 minutes.
  6. Carve the roast against the grain into thick slices and pour collected juices over the cut pieces. Serve alongside your favorite sides.
