Preparation Steps
  1. Prepare the Dough: Place store-bought pizza dough in a tightly covered bowl, allowing it to rest at room temperature for 3-4 hours.
  2. Caramelize the Onions: Heat olive oil and 1 tbsp of butter in a large skillet over medium heat. Add sliced onions and cook for about 5 minutes.
  3. Slow Cook Onions: Lower heat and cook for an additional 10 minutes until golden brown, stirring gently.
  4. Season the Onions: Add kosher salt, sugar, and pepper. Mix well, then add remaining butter and cook for another 10 minutes.
  5. Assemble the Pizza: Preheat oven to 425°F. Roll out the resting pizza dough and transfer to a greased baking sheet.
  6. Top with Gruyère and caramelized onions, then sprinkle with remaining cheese.
  7. Bake the Pizza: Place in the oven and bake for approximately 15 minutes until crust is golden brown and cheese is bubbling.
