- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Pierce each sweet potato several times with a fork and roast for 40-50 minutes until tender.
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta. Optionally, add parsley and mint.
- In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Pour the dressing over the filling and toss until well-coated.
- Cut each roasted sweet potato lengthwise and fluff the inside with a fork.
