Ingredients
  

For the Salad
  • 1 head Cauliflower Try broccoli for a different crunch.
  • 1 cup Cherry Tomatoes Can substitute with regular diced tomatoes.
  • 1 small Red Onion Green onions for a milder flavor.
  • 0.5 cup Black Olives Pitted.
  • 0.5 cup Green Olives Pitted.
  • 0.25 cup Parsley Freshly chopped.
For the Dressing
  • 0.25 cup Olive Oil Avocado oil as a substitute.
  • 2 tablespoons Red Wine Vinegar Apple cider vinegar works too.
  • 1 tablespoon Dijon Mustard Yellow mustard can be used.
  • 1 clove Minced Garlic Fresh garlic preferred.
  • 1 teaspoon Dried Oregano Or fresh herbs for extra flavor.
  • 1 teaspoon Dried Basil Or fresh herbs for extra flavor.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Black Pepper To taste.
  • 0.5 teaspoon Red Pepper Flakes Optional.

Method
 

Instructions
  1. Blanch the cauliflower in salted boiling water for 1-2 minutes, then cool in ice water.
  2. Drain and thoroughly dry the cauliflower with a towel.
  3. Combine all salad ingredients in a large mixing bowl.
  4. Whisk together the dressing ingredients in a separate bowl.
  5. Pour the dressing over the salad and toss gently.
  6. Chill in the refrigerator for at least 30 minutes to marinate.
  7. Give a final toss before serving and adjust seasoning as needed.
