For the Stir Fry
  • 1.5 lbs Chicken breasts cut into uniform, bite-sized pieces
  • 3 tbsp Extra virgin olive oil for cooking
  • Salt & black pepper to taste
  • 2 medium Zucchini sliced into half-moons
  • 2 Red bell peppers diced into chunks
  • 1 large Red onion sliced into strips
  • 2 cups Cherry tomatoes halved
  • 1 cup Kalamata olives pitted and halved
  • 4 cloves Garlic minced
  • 0.25 cup Sun-dried tomatoes chopped
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.5 tsp Dried thyme
  • 1 Lemon juice only
  • 0.5 cup Feta cheese crumbled for garnish
  • 2 tbsp Fresh parsley optional for garnish

Method
 

Step-by-Step Instructions
  1. Gather all your ingredients: chop the chicken, slice the zucchini, dice the red bell peppers, slice the red onion, halve the cherry tomatoes, and mince the garlic.
  2. Heat 3 tablespoons of olive oil in a large skillet over medium-high heat for about 2 minutes. Add chicken pieces and season with salt and black pepper. Sauté for 5-7 minutes until golden brown and cooked through, then remove and set aside.
  3. In the same skillet, add the sliced red onion and minced garlic, sauté for about 2-3 minutes until translucent and fragrant.
  4. Add the sliced zucchini and diced bell peppers to the skillet, cooking for 4-5 minutes until they start to soften but retain some crunch.
  5. Return the seared chicken to the skillet with the vegetables, add halved cherry tomatoes, Kalamata olives, and chopped sun-dried tomatoes. Mix in dried oregano, basil, and thyme. Cook for an additional 2-3 minutes.
  6. Squeeze lemon juice over the stir fry, remove from heat, and crumble feta cheese on top before serving.
