Ingredients

For the Base
  • 2 tablespoons Olive Oil Adds richness to the base; avocado oil is a great substitute.
  • 2 tablespoons Butter Provides a creamy texture; use unsalted for less salt.
  • 1 cup Onion Adds aromatic sweetness; shallots can be a milder alternative.
  • 4 cloves Garlic Imparts a strong aromatic flavor; fresh is preferred over powdered.
For the Soup
  • 2 tablespoons Tomato Paste Thickens the broth; double-concentrated gives richer flavor.
  • ½ cup Sun-Dried Tomatoes Contributes tangy sweetness and chewy texture; oil-packed are easiest.
  • 2 teaspoons Italian Seasoning Adds complex herbaceous flavor; substitute with dried basil, oregano, and thyme.
  • 1 teaspoon Dried Oregano Provides an earthy flavor; fresh can be used, but adjust the amount.
  • 1 teaspoon Crushed Red Pepper Flakes Adds a slight heat; omit for a milder soup.
  • ½ cup Dry White Wine Adds acidity and depth; use chicken broth for a non-alcoholic version.
  • 6 cups Chicken Broth The soup base; homemade enhances flavor, but store-bought is convenient.
  • 2 cups Cooked/Roasted Chicken Simplifies prep and boosts protein; leftover turkey works too.
  • 1 ½ cups Uncooked Rotini or Fusilli Pasta Adds heartiness; gluten-free pasta or zucchini noodles are great alternatives.
  • 1 cup Heavy/Whipping Cream Adds creaminess; half-and-half is a lower-fat alternative.
For the Finish
  • ½ cup Freshly Grated Parmesan Cheese Enhances flavor and richness; Pecorino Romano is a suitable substitute.
  • 2 cups Fresh Baby Spinach Provides nutrition and color; kale can be swapped in if desired.
  • ¼ cup Fresh Basil Provides freshness; Italian parsley works as an alternative.
  • Salt & Pepper Essential for seasoning to taste; adjust according to preference.

Method

Step-by-Step Instructions for Marry Me Chicken Soup
  1. In a large pot, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat. Once the butter is melted and bubbling, add 1 chopped onion and sauté for about 5 minutes until translucent and softened.
  2. Stir in 4 minced garlic cloves, 2 tablespoons of tomato paste, ½ cup of chopped sun-dried tomatoes, 2 teaspoons of Italian seasoning, and 1 teaspoon of dried oregano. Cook for around 1 minute until fragrant, constantly stirring to ensure the mixture doesn't stick.
  3. Add ½ cup of dry white wine to the pot, allowing it to simmer for 1-2 minutes. Stir well to combine and let it cook until the wine reduces slightly.
  4. Pour in 6 cups of chicken broth, increasing heat to high until it reaches a rolling boil. Once boiling, add in 1 ½ cups of uncooked rotini or fusilli pasta. Reduce the heat to medium-low, cover slightly ajar, and simmer for about 10 minutes, stirring occasionally.
  5. After 10 minutes, add 1 cup of heavy cream and 2 cups of cooked/roasted chicken. Cook for an additional 4-5 minutes, stirring gently.
  6. Remove the pot from heat and stir in ½ cup of freshly grated Parmesan cheese, 2 cups of baby spinach, and ¼ cup of freshly chopped basil. Season with salt and pepper to taste.

Notes

If making this soup in advance, cook the pasta separately to prevent it from soaking up too much broth.
