Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the dried thyme, oregano, parsley, salt, black pepper, and olive oil to form a thick aromatic paste.
  2. Gently use a spoon to carefully loosen the skin of the whole chicken and apply most of the rub underneath.
  3. Cut the lemon in half, squeeze the juice into the chicken cavity, and place the lemon halves inside.
  4. Place the chicken in the slow cooker and cook on low for 5 hours or high for 3 hours.
  5. Once cooked, transfer the chicken to a baking dish, drizzle olive oil on the skin, and broil for 5-10 minutes.
  6. Pour the juices from the slow cooker into a saucepan, mix the cornflour slurry, and simmer until thickened.
