- Heat a large skillet over medium-high heat. Once hot, add the ground beef, diced onions, and chopped bell peppers. Sauté for about 5–7 minutes, stirring occasionally, until the beef is browned and the vegetables are tender.
- Reduce the heat to medium and add the minced garlic, chili powder, cumin, paprika, cayenne pepper, and salt and pepper to the skillet. Stir well and cook for an additional minute until fragrant.
- Add the cauliflower rice and Rotel to the skillet. Stir everything together, cooking for 2–3 minutes until the cauliflower rice is heated through.
- Gently stir in the tortilla strips, if using, and sprinkle the fiesta blend shredded cheese over the top. Cover to allow the cheese to melt, then serve hot.
