  • 1 teaspoon Paprika Consider smoked paprika for added flavor.

  • 2 cups Cauliflower Rice Use store-bought or homemade.
  • 1 can Rotel (diced tomatoes with green chilies) Substitute with fresh diced tomatoes if needed.
  • 1 cup Fiesta Blend Shredded Cheese Substitute with cheddar or dairy-free option.
  • 8 pieces Zero Carb Street Taco Tortillas Can be left out for a grain-free option.

Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat. Once hot, add the ground beef, diced onions, and chopped bell peppers. Sauté for about 5–7 minutes, stirring occasionally, until the beef is browned and the vegetables are tender.
  2. Reduce the heat to medium and add the minced garlic, chili powder, cumin, paprika, cayenne pepper, and salt and pepper to the skillet. Stir well and cook for an additional minute until fragrant.
  3. Add the cauliflower rice and Rotel to the skillet. Stir everything together, cooking for 2–3 minutes until the cauliflower rice is heated through.
  4. Gently stir in the tortilla strips, if using, and sprinkle the fiesta blend shredded cheese over the top. Cover to allow the cheese to melt, then serve hot.
