  • 4 cups ciabatta bread cubes or French bread

  • 1 teaspoon kosher salt to taste
  • 1 teaspoon freshly ground black pepper to taste
  • 1/4 cup freshly squeezed lemon juice or bottled juice
  • 1 tablespoon lemon zest optional
For the Dressing
  • 1 cup mayonnaise or Greek yogurt
  • 1/2 cup buttermilk or regular milk with vinegar
  • 1/2 cup grated Parmesan or Pecorino Romano
  • 1 tablespoon Dijon mustard or yellow mustard
  • 1 tablespoon Worcestershire sauce omit for vegetarian

  • 1 head Romaine lettuce or iceberg lettuce

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). In a mixing bowl, combine olive oil, parsley, and garlic. Toss ciabatta cubes in the mixture until coated, spread on a baking sheet, and bake for 13-15 minutes until golden.
  2. In a resealable bag, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper. Add chicken and marinate in the fridge for at least 2 hours.
  3. Preheat the grill to medium-high. Grill marinated chicken for 4-5 minutes on each side until cooked through (internal temp 165°F).
  4. In a bowl, whisk together mayonnaise, buttermilk, Parmesan, garlic, lemon juice, mustard, Worcestershire sauce, and seasoning.
  5. In a salad bowl, layer chopped Romaine, grilled chicken, and croutons. Drizzle with dressing and toss gently to combine.
